  The specialty rolls are non-traditional, beautifully plated, and (so far) very delicious. My favorite was made with cucumber and apple inside of rice-- super flavorful and unique. A lot of the specialties are spicy (jalapeno, chili oils, wasabi), and they're a little pricy but because I haven't seen them in other restaurants, I think the cost is worth it. Service is personal and always exemplary.
